crystallized ginger recipe

Flush with my recent cookie success - I didn't even mention how I
remade the biscottii with more candied ginger and dried cherries and a
bit less cornmeal (I ran out) and it was great again - I decided to
make cookies yesterday.
Potentially silly question, but does
crystallized ginger disintegrate when baked in something, like say a
sweet potato casserole? We picked some up at Wild Oats the other day
and the granules are about 1/8 inch cubes, if that.
